Born from the Polynesian idea of migration — where travellers carried flavours, rituals, and traditions across the islands — Nui da Mano reimagines this story through the lens of Balinese ingredients and coastal energy.
Here, Polynesian cuisine isn’t copied; it’s reinterpreted. Each dish pays tribute to the immigrant influences that shaped Polynesia — from Chinese and Indian to Japanese and Filipino cultures — blending their techniques and spices with local produce to create something uniquely “Nui.”
Culinary Highlights

Curated by Executive Chef Manu, the menu celebrates migration and connection through food. Highlights include:
- Breadfruit Dips with XO Sauce, merging French finesse and Chinese umami
- Poisson Cru, a French-inspired favorite with an Indian twist
- Steam-Aged Grouper, where Chinese and Japanese methods meet the ocean
- Fried Pork Knuckle, balancing Chinese crispness, Indian spice, and Hawaiian warmth
Each dish is designed for sharing and storytelling, capturing the Polynesian ritual of communal dining — where every table becomes a celebration of family, friendship, and island life.
The Space: Natural, Sculptural, Soulful

Set against the backdrop of Batu Belig’s shoreline, Nui da Mano is raw yet refined — open-air architecture, natural textures, and a Moai stone centerpiece that anchors the space with quiet presence. From leisurely seaside lunches to sunset cocktails and late-night gatherings, it’s a venue designed to shift and glow with the rhythm of the day.
Nui da Mano also houses an in-house aging collection, where select meat and fish are matured to develop rich, layered flavors — a modern craft rooted in Polynesian respect for patience and process.
“The menu at Nui da Mano is a tribute to the people and flavors that built Polynesian roots,” says Executive Chef Manu. “It’s our way of celebrating migration — combining techniques, spices, and stories from many cultures, told through our own ingredients here in Bali.”

To keep the spirit of discovery alive, Nui da Mano will introduce a monthly ritual — a rotating dining experience inspired by stories, ingredients, and traditions from across the Polynesian islands.
